Almost every owner who asks me this has already decided the answer is a stronger fragrance running earlier. It is the one answer that cannot work, and the reason why is the most useful thing I can tell you about how a closed store behaves overnight.

Change the air before you change anything else
Thirty to forty-five minutes of running AC before you trade, not at the moment you unlock
Most stores switch the AC on and open the doors at the same time, which means the first hour of trading is spent slowly diluting fourteen hours of standing air with a customer walking through it. Bring the AC forward. Shutters and doors go up first, before the lights and the cases, and the unit runs and cycles properly for at least half an hour before you are open. If the store has a back-of-house door, a service corridor door or any openable window, use it for that half hour so the air has somewhere to travel to rather than simply circulating. This single change resolves the complaint in most of the stores that ask me about it, and it costs nothing but sequence.

Fix the nine-o'clock end, not the ten-o'clock end
Half of what you smell at opening was created at close the night before
A wet mop head left on the trading floor, a bin that was not emptied, cleaning chemicals left open, a cloth in a bucket, food in the staff room, a fridge nobody defrosts, damp cartons from a delivery stacked in a corner. None of these is remarkable at nine in the evening with the AC running. All of them are remarkable at ten the next morning in a sealed box. Give the closing team a short written list: bins out, mops out, chemicals closed, no food left, no damp packaging on the floor. Cleaning and ventilation do the work here, and fragrance is never a substitute for either of them.

This is the common and expensive mistake, and it is usually suggested with good intentions. Setting a machine to run for an hour before the team arrives produces a room in which yesterday's air is evenly fragranced, which reads worse than either component alone and teaches your staff that the fragrance is there for a reason they can smell. It arrives as "which fragrance is strong enough to deal with our mornings", and the honest answer is that no fragrance is, because the problem is not a shortage of scent. It is that your store spent fourteen hours as a sealed box and nobody let the air out. I have talked a lot of people out of a purchase on this one call, and I would rather do that than sell a machine that will be blamed for something it was never able to do.

What is happening is dull and mechanical. Every material in a store releases something at a low rate all the time - joinery, carpet, upholstery, adhesives, cleaning products, packaging. In trading hours the door and the AC keep clearing it. Between nine at night and ten in the morning nothing clears it, so it simply builds up to the level you notice on the way in.
