This page costs me money and I would rather write it than not. The question has a clear answer, the answer is a product we do not make, and every version of this page I have seen elsewhere quietly bends towards whatever the writer happens to sell. So here is the position in one line, and then the useful part: how to buy and check the thing I am recommending.

What should I look for in an unscented one? Four things. Genuinely unscented rather than lightly fragranced - ask the maker the question directly, because the words are used loosely. A clean burn, because with no fragrance in the wax the only smell left is the wick and the wax, and a guttering wick is its own smell right under a guest's nose. A burn time that covers a full service, so nothing is swapped mid-sitting. And one product for every table, so the room is consistent.

How do I check a candle before I commit to it? Light one in a small closed room with the door shut, leave it for twenty minutes, then come back in from outside. A cold nose walking in will tell you what your own nose in the room cannot. Do the same at an empty laid cover during service hours and sit in front of it. Then, before you order in bulk, check what your store cupboard already holds: mixed stock is how one table in six ends up scented while everybody believes the room is neutral.

Scented or unscented candles on a fine-dining table - which is right?
Unscented, and I will say the awkward part immediately: SOSA does not sell an unscented candle, so the answer to this question is a product you should buy from somebody else. Our own jar candles at ₹379 and ₹449 are scented. Their honest home is a washroom shelf or a lounge side table, and they do not belong on a dining table - because a scented candle on a table is in the worst position in the building: nose height, in the guest's own air, directly over the plate, for the length of a meal. I would rather lose the sale than sell you something for a room I have spent this cluster telling you to leave alone. Now the useful half: how to buy the thing I am recommending. First, insist on genuinely unscented. The words are used loosely, and there is a real difference between unscented and lightly fragranced; ask the maker directly and in writing, because a cupboard full of near-misses is how a room ends up faintly scented with nobody deciding. Second, judge the burn, because it is all that is left. Take the fragrance out and the only smell left is hot wax and a burning wick, faint but never nothing - so choose one whose wick burns cleanly rather than guttering, and trim it before each service. A smoking wick is its own smell thirty centimetres from a guest's face, and it soots the glass. Third, buy a burn time that covers a full service, so nobody is swapping a candle at a laid table between courses. Fourth, one product, every table. Mixed stock is the most common failure I find: three different products in the cupboard, two of them scented, and a room that everyone believes is neutral. Fragrance oil is flammable, so oil, refills and machines stay away from open flame and heat - table candles, flambé service, tandoors and ranges - and oil is not stored beside the candle stock. Anything about unattended flames in a public dining room is for your own operations team rather than for me. How to choose and check an unscented candle

Three steps, and none of them earns us anything. Do the third one before you place a bulk order rather than after.

Ask the maker a direct question
Unscented and lightly fragranced are not the same word
Get it in writing: is there any fragrance in this wax at all. The trade uses unscented, subtly scented and clean-burning almost interchangeably, and a candle described one way on a shelf card is sometimes described differently on its own specification. This matters because a faint fragrance at the table is not a small version of a good idea - it is the same decision in a slightly quieter voice, in the worst position in the room. If a maker cannot answer plainly, that is your answer. And be equally direct about our own range: our jar candles at ₹379 and ₹449 are scented and are not a candidate for your tables.
Tip: Ask for the specification, not the shelf card. The words on the two are often different.

Judge the burn, because it is all that is left
With no fragrance in the wax, the wick becomes the whole story
An unscented candle is not a candle with no smell; it is a candle whose only smell is hot wax and a burning wick, which is faint and never quite nothing. So the quality of the burn is the thing you are actually buying. Look for a wick that stays upright and steady rather than guttering, no visible smoke coming off the flame, and no soot climbing the inside of a glass or a shade. Trim the wick before each service. A smoking candle is a smell thirty centimetres from a guest's face and a mark on your glassware, and it is the failure I see most often once the fragrance has been removed.
Tip: Burn a test candle for the full length of a dinner service, not for ten minutes. The last hour is where a poor wick shows itself.

Audit the cupboard, then test with a cold nose

Count the different candle products in your store cupboard. Three is common, two of them fragranced, and nobody has noticed because the room is judged by people who have been in it since the afternoon. Standardise on one product with a burn time that covers a full service, so nothing is swapped at a laid table. Then test properly: light one in a small closed room, leave it twenty minutes, go outside and come back in. A cold nose arriving from the street will read the room the way your guest does. Do the same at an empty laid cover at service hours, and sit in front of it for as long as a starter takes.

I have written this page three times and thrown two of them away, because both earlier versions found a way to end up recommending one of our candles for a lounge instead of answering the question. The question is about a dining table. The answer for a dining table is unscented, we do not make an unscented candle, and the correct thing for me to do is say that in the first screen and then be useful about somebody else's product.

The part I can actually help with is what to look for, because unscented is a word the trade uses loosely and because taking the fragrance out of a candle changes what you are buying. With no fragrance in the wax, the only smell left is hot wax and a burning wick - faint, never quite nothing - so the burn becomes the whole specification. A steady wick, no visible smoke, no soot up the glass, trimmed before each service, and a burn time that covers a full sitting so nothing is swapped at a laid table.
