Indian cooking is not louder than other cooking. It is oilier in the air, and that is a physics fact rather than a judgement. A tadka is the clearest example: hot ghee or oil, then mustard seed, cumin, hing and curry leaf dropped into it, and the whole point of the technique is to blow the aromatic compounds out of the spice and into the fat in about fifteen seconds. What leaves the pan is not only fragrance. It is a fine aerosol of cooking fat carrying that fragrance, thrown upward on a very strong convection current. Deep frying does the same thing for far longer. Those droplets are too small to see and too light to fall like crumbs, so they travel wherever the air in your home is travelling, and they stop when they meet something soft or something cool: curtains, sofa fabric, cushion covers, throws, rugs, dining chairs, and a thin invisible film on walls, ceilings and cabinet fronts. Which reframes the whole problem. Two hours after dinner, what you are smelling is usually not in the air at all. Reasonable ventilation clears the airborne part within an hour or so. The smell that is still there at eleven at night is on the curtains and on the sofa, releasing slowly, and you notice it most when you sit down and compress the fabric. This is why opening a window late in the evening does so little, and why washing the cushion covers does so much. So the work is not perfuming the air. Most people switch the chimney on when they notice a smell, which is already too late, because by then the aerosol is in the room and heading for the sofa. Then think about capture area, which is the part nobody explains: a chimney only pulls what is more or less directly beneath it. Which way the air leaves
Through the kitchen and out, never across the living room
Air moves from where it can get in to where it can get out, and most homes accidentally nominate the living room as the exit. If the only opening is the balcony door beside the sofa, every bit of loaded kitchen air is being pulled past your upholstery on its way outside. Reverse it. Close the kitchen door while you cook - a light sliding or folding door across an open kitchen, used only during cooking, is one of the best value interventions in an Indian home. Open a window on the far side of the kitchen with the extraction running. Turn the living-room ceiling fan off, because a fan pushes kitchen air into curtains and cushions with great efficiency. Start with the filters, because in a home that cooks with ghee and oil daily they collect fat fast, it oxidises, and then every warm draught over them puts a stale rancid note back into the kitchen. Soak baffle filters in hot water with dishwasher powder or a strong detergent every two to four weeks. Then the surfaces: fresh film lifts with warm water and a drop of dish soap, while weeks-old film has gone sticky and yellow and now needs a degreaser and real effort, which is exactly why cabinet fronts above a hob are the hardest surfaces in the house. Wipe the hob surround, backsplash, counters, cabinet fronts and dining table while they are still warm, and add the hood itself and the wall behind the hob to the weekly list. For soft things, test by pressing your face into them: cushion covers, throws and table linen go in the wash, rugs get vacuumed and aired outside, and the curtains nearest the kitchen want a wash or a dry-clean two or three times a year. Airing a room full of loaded fabric does very little. Washing the fabric does almost all of it.

I want to say this plainly, because a lot of what is written about this subject is quietly insulting. Indian food does not smell bad. It smells like a home where somebody is cooking properly, and I would rather live in that home than a scented one where nobody eats. What is true, and it is chemistry rather than criticism, is that we cook with more fat at higher heat, so more oil ends up airborne and more of it lands on the furniture. That is a ventilation problem, not a culinary one.

So my first questions are never about fragrance. When did you last soak the baffle filters. Is the pressure cooker under the hood or on the counter beside it. Which window is open while you fry. Quite often that conversation ends without anybody buying anything, and that is a good outcome. Baffle filters work by collecting fat out of the extracted air, and in a home that cooks with ghee and oil daily that fat builds up quickly, oxidises and starts smelling stale and rancid on its own. Every time warm air passes over it you get that smell back in the room. A clogged filter also strangles the airflow, so the extraction works worse precisely when you need it most. Soak baffle filters in hot water with dishwasher powder or a strong detergent every two to four weeks with daily Indian cooking, not when they look dirty. If the chimney recirculates rather than ducts outside, its carbon cartridge is finite too and is usually well overdue.
Does a diffuser or air freshener remove cooking smell?
No. A scent machine adds fragrance, it does not remove odour. Nothing about diffusing a fragrance breaks down, neutralises or captures the aroma compounds already in a room, so a diffuser running over an unaired kitchen gives you both smells at once.
