Three things decide whether a big house smells like one home or like five. Only the third one costs money.

Scent goes where air goes and stops where air stops. Two connected rooms on one air-conditioning loop are a single volume; a closed guest wing on its own split units is a separate one; and two floors are always two, because warm air rising up a stairwell is not a distribution system you can rely on. Give the unused parts the same attention
Guest rooms, spare bathrooms, store rooms and the far wing
The rooms that make a big house smell inconsistent are almost always the ones nobody goes into. A closed guest bedroom goes stale within a fortnight. A guest bathroom used twice a year has a floor trap that has long since dried out, which lets drain air straight back into the room, and a mug of water down it weekly is the entire fix. Store rooms hold still air and cardboard. Wardrobes on outside walls collect condensation. Put every room on the same weekly rotation as the ones you live in: windows and doors open for an hour, cupboards opened, water down the traps. It takes about fifteen minutes for a whole floor and it removes the single biggest cause of a house that smells different at the far end.
