This is the page where I have to disappoint the person reading it, and I would rather do that here than after you have bought something. There is no fragrance in the world that deals with a cooking smell, and the reason is worth ten minutes of your time.

A door kept shut beats every dial on every machine ever sold
In a store with a door, the single biggest variable in how much corridor air you take in is whether that door is shut between customers or propped open because it is easier. Make it a floor rule, write it into the opening checklist, and be honest that a team under pressure will prop it unless somebody owns it. Where the shopfront is open by design, the equivalent question is structural: can a vestibule, a lobby or an air curtain be introduced at the next refit? That is a fit-out and mall-approval matter for your designer and the centre, not something a fragrance supplier can specify, and it is the only intervention on this page that genuinely changes the volume of air arriving from outside your demise.

Food tenancies operate under fit-out and extraction obligations, and whether those are being met is a question for the centre rather than for you or for me. Write to mall management with the times, the days and where in your unit it is strongest, and ask three plain questions: what the building's air handling does at those times, whether the corridor is pressurised relative to your unit, and whether the neighbouring extraction has been checked recently. Ask for a written answer. Pressure, extraction, fresh-air intake and filtration are engineering matters for mall management and your HVAC contractor, and I hand them over rather than guess - a fragrance supplier who starts advising on them has left their trade behind.

Accept the threshold instead of fighting it
Turning your own level up buys an overpowering interior and an unchanged doorway
This is where money gets wasted. The instinct is to compensate at the dial, and the result is entirely predictable: the front of the store still smells of the corridor, because the corridor is renewing that air continuously, while the middle of the store is now too much for the advisor who breathes it nine hours a day. The threshold is not where a store's air is decided, and a store that accepts this and sets a comfortable level well inside is more coherent than one that has been pushed upward in an argument it cannot win. I get this question most often from retailers who have already been told yes by somebody else. A supplier has been in, walked the unit, and quoted for a machine on the basis that it will handle the food court. It will not, and the reason is not a matter of opinion or of choosing a better composition. Two smells in one volume of air combine. They do not cancel. Whoever is standing in that room receives both, and the brain reads the pair as a single new thing that is worse than either was on its own.

Food makes it sharper still, because cooking is the fastest thing a human nose identifies. Nobody has to concentrate to recognise it, nobody is uncertain about it, and nobody is fooled by something dry and woody laid on top. What they perceive is the food, plus the effort. In a store selling pieces at these prices, the effort is the part that costs you, because it reads as a room with a problem being managed rather than a room somebody got right.

So the useful work is not mine.
