This is the shortest answer in the whole of this guide and the one I am most careful about, because it is the question where a supplier can make a lot of money by being vague. I would rather be plain and lose the sale.
Quick answers — read this first
Can a scent machine remove cooking odours from a kitchen showroom? No. Not at a low setting, not at a high one, not with a different oil, not with a bigger machine. A scent machine nebulises fragrance oil into the air of a room. Adding is the entire mechanism, and adding a second smell to a room that already contains a first one leaves you with two. SOSA makes no purifying, neutralising, odour-removing or antibacterial claim for any machine it sells, at any price, and never will.

Then what does make a cooking smell go away? Two things, and only two. Either the air carrying it is replaced - extraction, air change, ventilation - or the surface holding it is cleaned, which covers worktops, blinds, upholstery, aprons and the filter in your hood. That is the entire list. Everything else on the market is one of those two with a story attached, or it is fragrance. If you are buying a diffuser for this reason, you are buying the wrong thing and I would rather you kept the money.

What should I do if a supplier promises otherwise? Ask one question and keep asking it: by what mechanism, and where does the smell go? If the answer involves binding, counteracting, cancelling or neutralising, ask again until somebody says the word covering, because that is what is being described. Then ask for the claim in writing. A supplier who will put it on a letterhead is rare, and a supplier who will not has just told you the answer. Our own machine is ₹11,999 and it does not do this either.

No. Not partly, not at the right setting, not with a particular oil, not with a larger unit, and not with ours. A scent machine takes fragrance oil and disperses it into the air of a room. Adding is the entire mechanism, start to finish. There is nothing in a diffuser that finds another molecule, attaches to it and takes it away, because that is not what a diffuser is; it is a device for putting a smell into a space, which is a genuinely useful thing to own and an entirely different thing from what you are asking about. Put a fragrance into a room that already smells of cooking and you do not get the fragrance and you do not get a clean room. You get both smells at once, and the mixture is harder to live with than the cooking was, because a customer can forgive a showroom that smells of last night's demonstration far more easily than one that smells of last night's demonstration and pine. The first reads as a working building. The second reads as something being hidden, and people detect that without ever being able to name it. Extraction, air change and ventilation - the first and biggest route
A smell in the air leaves when the air leaves. That means the hood over your demonstration hob running well past the end of the cooking, whatever fresh-air capacity your system has, and enough time for the volume to turn over properly. It is the least interesting sentence in this guide and it does the overwhelming majority of the work in any building that cooks. What that extraction needs to be capable of - hood sizing, air-change rates, make-up air - is a calculation for your HVAC contractor, who can do it properly, and not for a fragrance company that would only be guessing. I will not pretend to a competence I do not have.
Tip: If the hood goes off when the hob does, you are throwing away the cheapest step you own.

Clean the surface
What survives the night was never airborne by morning
Anything still noticeable the next day is being held by material rather than by air, because the air has been replaced many times over since. In a showroom that means blinds, chair upholstery, rugs, curtains, cushions, aprons, cloths and, very often, the filter in the extraction hood. None of those can be ventilated and none of them can be fragranced - they have to be cleaned or laundered on a rhythm that matches how often you actually cook. This is the step showrooms underestimate, and it is the reason a building can be perfectly well ventilated and still smell of Saturday on Tuesday.
Tip: Put the soft furnishing near the hob on a demonstration-day list, not the general cleaning contract.

Test any claim in fifteen seconds
Ask where the smell goes, and keep asking
If a supplier tells you their machine deals with cooking smells, ask by what mechanism and where the smell ends up. Words like binding, counteracting, cancelling and neutralising are descriptions of a category rather than of a process, and if you keep asking politely you will usually arrive at covering, which is the honest word. I write these guides partly so that I never have to have a certain conversation, and this is the conversation. Somebody has been shown a machine, or a demonstration with two jars, and has come away believing that a diffuser will deal with the smell of cooking in their showroom. It will not, ours included, and the reason is not a limitation to be engineered away in a later model. It is what the category is. A diffuser puts a smell into a room. There is no stage in it that takes one out.

What that means practically is that a fragrance run over cooking gives you a room carrying both, which is worse than the room you started with, and reads to a visitor as concealment rather than housekeeping. So I will say it in the form I am happy to be quoted on: SOSA machines add a fragrance to a room, and SOSA makes no air-quality, purifying, neutralising, odour-removing or antibacterial claim of any kind for anything it sells. If a supplier tells you otherwise, ask them where the smell goes, and then ask for it in writing. The answer to the second request is usually more informative than the answer to the first. For completeness, since people do ask what to buy once this claim is off the table: whatever you choose, keep it clear of anything edible. SOSA's own Fresh Brew at ₹849 is coffee and vanilla, and in a showroom that cooks it competes with the real thing.
