Every fragrance business is offered restaurant work and most take it, so it is worth explaining why we decline most of it. The reason is not squeamishness, it is that the product would make the restaurant worse. Flavour is overwhelmingly a matter of smell. What the tongue contributes is a small set of basic sensations; almost everything a person means when they describe how a dish tastes is arriving through the nose, both from the plate directly and retronasally as they eat.
