Almost everyone plans this backwards, starting at the door and working inward. The door is the one part of your store whose air you do not own, and the moment worth designing happens a few seconds later than the one everybody thinks about.

What should customers smell when they first enter a boutique? For the first second or two, whatever is outside - and there is nothing you can do about that. A door that opens constantly is an air exchange rather than a wall, and a street or mall entrance can turn over the air by the threshold many times an hour. What a customer should smell is the breath they take three or four steps in, once they are properly inside your volume of air: a room that is clean, dry and looked after, with no single note standing forward. Not a fragrance. A room.
Should the entrance be scented more strongly to make an impression? No, and this is the most expensive mistake in this subject. Turning the level up to make the doorway register does not fix the doorway - the air there is still being exchanged - but it does over-scent the whole interior for the forty minutes the customer actually spends in it, and the nine hours a day your advisors do. Stop designing the doorway

This is the defining physical fact of retail scenting and it is the one nobody wants to hear. Every time your door opens, a volume of your air leaves and a volume of the street or the corridor arrives, and on a busy trading day that happens continuously. The threshold is therefore not where a store's scent lives, and the correct response is architectural rather than olfactory: place the source well inside, and if the fit-out allows an air curtain or a small entrance lobby, specify it, because an entrance lobby does more for a boutique's air than any machine setting ever will. What you must not do is compensate by turning the level up, which leaves the doorway smelling of the street and the interior smelling overpowering.

Stand where a customer stands after four steps and take a breath. That is your actual arrival, and it should read as a clean, dry, well-kept room with nothing standing forward - the sense that somebody looks after this place, rather than the sense that something has been sprayed in it. Get there by keeping the register dry and the level low, and by making sure nothing else in the building is competing: a candle at the till, a plug-in in the washroom or a strongly perfumed cleaning product will all reach this spot too. When a retailer tells me they want customers to notice the fragrance the moment they walk in, I know two things immediately. The first is that the store will end up over-scented, because arrival is the only moment a nose is sensitive and tuning for it guarantees too much air for everyone else. The second is that it will not work anyway, because the doorway is an air exchange. I have stood in beautiful entrances that smelled entirely of the mall corridor while the showroom behind them was heavy enough to be uncomfortable, and that is what happens when you fight a door with a dial.
The moment that matters is small and specific: the breath a customer takes three or four steps in. It should be clean, dry and unremarkable in the best sense - a room that is looked after. If it announces itself, you have overshot. And most of the work getting there is not fragrance at all. It is a ventilated room, a cleaning schedule, and no candles or plug-ins competing from the till and the washroom.
