This is the list I would want a group to hold if I were sitting on the other side of the table, which means it contains the question I am least comfortable answering. I have left it in and answered it by name, because a checklist that only works on competitors is marketing rather than a checklist.

Ask for cubic coverage and watch the pause
A square-foot figure hides your ceiling, which is where capacity goes
Ambient scenting is a volume problem, so a coverage figure in square feet is either a translation or a marketing number. Ask for cubic metres and ask what assumption about ceiling height was used. Then do your own arithmetic: a 250 sq ft foyer at three metres is about 21m³; the same floor area under a six-metre shell is roughly double, and an atrium or a rooftop arrival eats capacity faster still. This matters most to a group, because your estate will contain at least one double-height arrival where a square-foot rating would have promised you something the room cannot deliver. Ours is 1000m³, about 2,000-3,000 sq ft, and I would rather you work from the first number.
Tip: Ask what ceiling height the supplier's square-foot figure assumes. If nobody knows, the figure was never a measurement.

Ask what they refuse to scent
A supplier with no refusals has not understood restaurants
This is the question I would ask first if I were buying. A company that will happily scent your dining room has not thought about the fact that the dish on the plate is the composition your guest paid for, or that a seated guest cannot walk away from a fragrance for three hours. Our refusals, in writing: dining rooms, chef's tables, tasting-menu rooms, the pass and kitchens stay unscented; no machine anywhere its output can reach a table; nothing edible in any zone; and nothing sold as a cover for cooking, grease, fish or a drain, because fragrance is never a mask and we sell no extractor, purifier or deodoriser. Ask also whether they will call a fragrance food-safe. We will not, because we have not tested for it.
Tip: Ask the supplier which of your sites they would decline. A company that declines none of them has not read your plans.

Being waterless, it adds no moisture and leaves no residue on surfaces or equipment. The SOSA Sukoon (₹1,899) is an ultrasonic cool-mist diffuser covering roughly 270-320 sq ft and is supplied with three 15ml fragrances; the water-based Hotel Collection (₹299 / ₹999 / ₹1,799) is an ultrasonic fragrance and is not a refill for a waterless cold-air machine.
