I have read a fair number of brand books with a fragrance page in them, and almost all of it is adjectives. Warm. Considered. Softly welcoming. Nobody can buy any of that, so somebody eventually buys a floral, and the chain ends up smelling like a beauty salon by committee.
Quick answers — read this first
Should signature scenting be in the brand guidelines? Yes, in the same section as the colour values and the signage rules, and for the same reason: it is something several people will buy independently over several years, and without a written entry each of them will use their own judgement. But it only helps if it is written as a specification. An entry made of adjectives is decoration. The test I apply to any brand-book entry is whether somebody who has never met you could execute it in three years without ringing anyone. Warm, welcoming and considered fails that test instantly. Name the profile, name the register it sits in, and name what it is not. Clean, dry and cool; white tea, a dry light citrus, soft dry woods; and explicitly not floral, powdery, sweet, rose, vanilla or lavender. That exclusion line does more work than the inclusion line, because the default answer a supplier offers a women's health brand is almost always a soft floral, and floral is exactly how a clinic starts reading as a salon.

If you only write one line, write this one. Examination rooms, prenatal and scan rooms, postpartum care rooms, lactation and feeding rooms, pelvic-floor and other treatment cabins, procedure and recovery areas, and any room where a patient is undressed, mid-treatment or unable to leave: unscented, always. Never write lightly scented, because that phrase is how a machine ends up in a treatment cabin two years later. The reframe is simple: this entry is not there to describe how the brand feels. It is there so that somebody three years from now, opening site nine, orders the right thing without needing your taste.

So I would write it the way the colour values are written. Name the profile and name what it is not, because the exclusion is doing most of the work - the default a supplier offers a women's health brand is a soft floral, and floral is the fastest way to make a clinic smell like a salon.
