"Is it natural or synthetic?" is the question I get asked most, and it is the wrong question. As a perfumer I have to tell you something uncomfortable first: everything is chemicals - water, khus root, the air in your car. The real choice in a winter car fragrance is not natural versus synthetic. It is naturally-derived and alcohol-free versus cheap synthetic and alcohol-heavy.
Quick answers — read this first
Is natural always better than synthetic? No - and the framing is misleading. Everything, natural or lab-made, is chemicals. The meaningful contrast is a well-built, naturally-derived, alcohol-free formula versus a cheap synthetic one drowned in alcohol.

Why woody and naturally-derived suits winter
Cold air slows evaporation, which means a winter cabin reveals a fragrance more slowly and lingers on its base notes. That is a gift to warm, woody, naturally-derived scents.
