How to Keep an Open Kitchen and Living Room Smelling Fresh

Frying does not simply release a smell into the air. Hot oil breaks up into an aerosol - microscopic droplets of cooking fat, carried up on the steam and the convection current rising off the pan - and those droplets travel wherever the air travels. In an open-plan home the air travels straight into the living room, because there is nothing in the way. The droplets are far too small to see and far too light to fall like crumbs, so they drift until they meet something cool or something soft, and then they stay there. Curtains, sofa fabric, cushion covers, throws, rugs, dining chair upholstery, and a thin invisible film on walls, ceilings and cabinet fronts. That film is the entire story. By the time you sit down after dinner the air itself has largely cleared, and the smell is still in the room because it is no longer in the air at all. It is on the textiles, re-releasing slowly for hours. Which means the routine has to work at three different frequencies, because the deposit builds up at three different speeds. Every time you cook: extraction on before the pan gets hot and left running 15 to 20 minutes after you stop; the kitchen window on the far side open rather than the balcony door beside the sofa; the living-room ceiling fan off until the kitchen air has gone; the pan, used oil and food waste out of the room; and a two-minute wipe of the hob surround, backsplash, counters and dining table while the film is warm and fresh. Every week: check and degrease the extractor hood filter, which in an Indian kitchen saturates far faster than the manual suggests and which stops capturing grease once it has; empty and actually wash the bin rather than just changing the liner; run hot water and a little soda down the kitchen drain traps, because a dry or dirty trap in an open plan is a smell in your living room; look at the fridge, particularly the vegetable drawer; and vacuum the rug and the sofa seams with a brush head. Every month: cushion covers, throws and table linen through the wash. Twice a year: the curtains nearest the kitchen washed or dry-cleaned, and the upholstery steam-cleaned. It helps to rank the tools honestly, because they are not interchangeable. Extraction removes. A chimney or exhaust fan running over the pan pulls the oil aerosol out of the building before it can reach anything soft. Ventilation removes. An open window on the far side of the kitchen gives the loaded air a route out that does not run through your sofa. Cleaning removes. Wiping the film off while it is fresh, and washing or airing the textiles, takes away the source that keeps re-releasing. An activated carbon filter adsorbs some odour, partially, and it saturates, so it needs replacing on schedule to keep doing anything. A HEPA filter does not do this job - HEPA is designed for particles, and the odour compounds you are actually smelling are gases that pass straight through it. And fragrance removes nothing at all. It is cosmetic, it comes last, and it belongs on a room that is already clear. Once that is running, fragrance has an easy job and does it well.
