Puri on a Sunday, pakoras when it rains, a fish fry because it is Friday. Nobody is giving those up, and nobody should. Frying just behaves differently from the rest of the week, and once you know how, the plan for a frying day is easy and mostly costs nothing.

Why does frying smell stay in the house longer than boiling or steaming? Because frying aerosolises far more fat. Boiling and steaming release water vapour carrying some aroma, which disperses and does not deposit much. Should I leave the exhaust on after I finish frying? Yes, for 20 to 30 minutes. A pan of oil at frying temperature holds an enormous amount of heat and carries on releasing aerosol as it cools, and the hob, the hood and the used oil release with it. Switching everything off the moment the last pakora comes out means that whole tail goes into the room and towards the soft furnishings. It is the single most skipped step in a frying household and the cheapest one to fix.

What should I actually do on a day I am deep frying, so the house does not hold it?
Frying is a different problem from a quick sabzi, and the difference is quantity. A litre of oil at frying temperature, held there for half an hour, throws far more aerosolised fat into the room than any other technique in a home kitchen, and the convection column above a kadhai is powerful enough to carry it well past a badly placed hood. Indian cooking is not louder than other cooking. It is oilier in the air, and that is a physics fact rather than a judgement. A tadka is the clearest example: hot ghee or oil, then mustard seed, cumin, hing and curry leaf dropped into it, and the whole point of the technique is to blow the aromatic compounds out of the spice and into the fat in about fifteen seconds. What leaves the pan is not only fragrance. It is a fine aerosol of cooking fat carrying that fragrance, thrown upward on a very strong convection current. Deep frying does the same thing for far longer. Those droplets are too small to see and too light to fall like crumbs, so they travel wherever the air in your home is travelling, and they stop when they meet something soft or something cool: curtains, sofa fabric, cushion covers, throws, rugs, dining chairs, and a thin invisible film on walls, ceilings and cabinet fronts. The frying-specific detail that catches everyone is the tail. A pan of hot oil holds a great deal of heat, and it goes on releasing aerosol for a long time as it cools - as do the hob, the hood and the used oil sitting out on the counter. So switching the chimney off as the last piece comes out sends that whole tail into the house. Leave the extraction running 20 to 30 minutes after you finish. Then store the oil: let it cool, strain it if you are reusing it, and put it into a covered container rather than leaving an open kadhai on the counter overnight, because a pan of used oil is a slow, steady source all night. And then the thing that quietly turns a good kitchen into a smelly one: the chimney filter becomes the source. Baffle filters work by making greasy air change direction sharply so the fat drops out and collects. Frying is not simply stronger cooking. Three things about it behave differently, and each has its own fix.

The volume of oil in the air
A kadhai puts more fat into the room than anything else you cook
Boiling and steaming release water vapour carrying a little aroma, which disperses and deposits very little. Deep frying holds a large volume of oil at high temperature for a long stretch and generates a strong upward convection column, and that column carries a fine mist of cooking fat with it. This is why a single frying session can undo a week of careful ventilation, and why the same house smells fine after a month of dal and rice. Practical consequences: fry under the hood rather than on a portable induction plate on the counter, because a hood only captures what is beneath it. Use a lid or a splatter screen where the recipe allows, which cuts both the mess and the airborne load. Keep the oil at the right temperature, since oil that is too cool takes longer and smells heavier. And on a big frying day, take anything soft out of the firing line if you can - move the throws off the sofa arm, close the bedroom doors, and pull the dining chair cushions away.
Tip: fry under the hood, not beside it. A chimney only captures what is directly below it.

The oil keeps releasing long after the flame is off
This is the step almost everyone skips. A pan of oil at frying temperature holds a great deal of heat and continues to release aerosol as it cools, and so do the hob, the hood and the splashes around them. Switch everything off as the last pakora comes out and that entire tail goes into the room instead of up the duct, at exactly the moment everybody wanders in to eat. So leave the extraction running 20 to 30 minutes after you finish, keep the kitchen window open across that period, and keep the kitchen door closed while it happens. Then deal with the oil itself: let it cool, strain it if you are reusing it, and get it into a covered container or a bottle rather than leaving an open kadhai on the counter overnight, because used oil is a slow, steady source for as long as it sits there uncovered. The same goes for the food waste, the used batter bowl and the paper you drained on, all of which should be out of the kitchen or sealed before you sit down.

Fresh film lifts with warm soapy water. Old film needs a degreaser
There is a window, roughly the same evening, in which everything the aerosol landed on comes off easily. Fresh film dissolves with warm water and a drop of dish soap. Left for weeks, it oxidises, goes sticky and yellow, and turns into the job everybody dreads on cabinet fronts above a hob. Ten minutes on the night you fry is worth an hour later, and the list is short: hob surround, backsplash, the hood and its underside, counters, cabinet fronts within a metre of the pan, the dining table and any chair backs nearby. Do the baffle filters on their own schedule too, every two to four weeks with daily Indian cooking, in hot water with dishwasher powder or a strong detergent - a saturated filter releases a stale rancid smell of its own and chokes the airflow at the same time. Then the fabric the next day: cushion covers, table linen, throws, and the curtain panel nearest the kitchen a few times a year. There is no shortcut that gets oil out of fabric without washing it.
Tip: ten minutes with warm soapy water on the night you fry saves an hour with a degreaser next month.

What I will say is that a kadhai of hot oil is a genuinely different event from a pan of dal, and it deserves its own twenty minutes of attention at the end.

Can I just spray an air freshener after frying?
