An air-conditioned interior flattens sweetness and lifts anything heavy, so a fragrance shortlisted in a meeting room can behave completely differently in the gallery. Run each candidate for three or four days and judge it by walking in from outside, because you stop registering a scent within minutes of standing in it. What is not survivable is the call that comes the afternoon before, asking whether we can courier something overnight, because the part that takes time is not the machine.
