Get down to it with a fresh nose
A reservoir is always louder up close than the room is at head height
Stand outside for ten minutes first, because your nose adapts within about twenty minutes of being in a room and an owner who has been on the floor since morning genuinely cannot do this test. Then work low: the carpet pile, the seams and underside of every cushion, the foam inside a seat if you can reach it, the back of a loose rug and the floor under it, the felt lining inside a case, the bottom of a curtain. Whatever gets noticeably louder as you get closer is your reservoir. If nothing does, the smell is arriving from elsewhere - the corridor, a drain, the stockroom - and cleaning your seating will not touch it.
Tip: Do this before opening rather than after close. A day of people walking across a carpet stirs the pile and changes the reading.

Clean it properly, and dry it more carefully than you clean it

A deep clean with proper extraction removes far more than a surface clean, but the extraction is only half the job and the drying is the half that goes wrong. Schedule the work for the end of a trading week, keep the air conditioning running through the dry-down, and use any back-of-house door while the store is empty so the moisture has somewhere to go. Do not let anyone lay stock or seating back onto a floor that is still cool to the touch. Know when it is past cleaning
Some reservoirs are replaced, and some are not a fabric problem at all
Cleaning fails in three situations worth recognising early. If the backing rather than the pile is holding the smell, extraction from above will not reach it. If the item is old and has absorbed over years, you are cleaning the top of a full sponge. And if moisture is coming up from below - a slab, a failed membrane, a leak in a service void - then the carpet is a symptom and replacing it simply gives the problem a new sponge. The third case is a floor and waterproofing question for your contractor and not a fragrance question at all, and it is the one where retailers most often spend twice. The reason I like this question is that it is nearly always asked by someone who has already done the sensible things. They found the leak, they finished the fit-out, they got rid of whatever came in on a delivery - and the room still smells faintly wrong, so they conclude the answer must be fragrance. It is not. What they have is a reservoir, and a reservoir does not care that the source is gone. It is still letting go of what it took in.
Every soft thing in a boutique behaves this way: the carpet and, more importantly, its backing; the foam inside seating; curtains; felt case linings; fabric panels. They absorb, they hold, and they release over weeks, faster when the room warms up and faster again when people walk across them. The test is easy and slightly undignified - go outside for ten minutes, come back, and get your face down near each of those things. Whatever is louder up close than the room is at standing height is what you are looking for. Then it is a cleaning contractor's job, with the drying handled as carefully as the cleaning, or a replacement.
