Every showroom owner who asks me this already suspects the answer and is hoping I will give them permission to skip a step. I will not, but I will give you something more useful than a lecture: a gate of four questions, written down, that settles the argument without either of us having an opinion about it.

Fragrance or ventilation - which comes first in a new showroom?Ventilation, always, and it is not a close call. Air change is the only thing that ends an off-gassing calendar, and fragrance does not shorten it by a day. More to the point, a room that cannot replace its own air will keep every smell it acquires, including the one you paid for - so a machine installed into a poorly ventilated showroom produces a stale version of your own fragrance within weeks, which is the complaint I hear second most often in this category.
How do I know when the building has done enough? Write down four gates and answer them honestly. Can the room genuinely replace its air? Does extraction reach the places that need it, including the back store and any demo kitchen? Has the fit-out finished curing? And is the building actually clean, including behind the tall units? All four have to pass. If one fails, that is where the next money goes, and it is usually a fan, a door, an engineer's visit or a skip rather than anything from a catalogue.
What if I have opened already and cannot wait? Then trade unscented, which is a perfectly respectable thing to do and much easier to explain than a room smelling of two things. In a new kitchen showroom, should ventilation or fragrance be fixed first?
Ventilation, and it is not close enough to be an interesting question - but the useful part of this answer is not the ranking, it is the gate. Write these four questions down and answer them honestly before anybody quotes you for a machine. One: can this room genuinely replace its air? Not whether it has air conditioning, which conditions air rather than replacing it, but whether fresh air actually enters and stale air actually leaves, and whether anyone has ever been shown the fresh-air setting on the air handling. Two: does extraction reach where it needs to? That means the back store where boards, offcuts and flat-packed carcases sit, and any live demo kitchen, which needs real extraction rather than a decorative hood. Three: has the fit-out finished curing? Laminate, adhesive, MDF, plywood, edge banding and paint run their own calendar, measured in weeks, and every new display restarts part of it. Four: is the building actually clean - behind the tall units, inside the carcases, in the back store, with the packaging and offcuts gone rather than stacked in the quietest corner of the air path? If any one of those four fails, that is where your next rupee goes, and it is almost always cheaper than a machine: a fan, a propped service door, an hour of an engineer's time, a vacuum instead of a broom, a skip. Here is why the order matters more than it looks. Everyone assumes the risk of buying too early is simply that the fragrance is wasted. It is worse than that. A room that cannot replace its own air holds on to everything it acquires, including your own fragrance, and a fragrance that never clears stops reading as fresh within a few weeks and starts reading as stale - which is the second most common complaint I get in this category, and it comes from showrooms that installed a good machine into a building that had failed gate one. So the gate is not moralising about doing things properly. It is the difference between a fragrance that reads as a well-kept room and one that reads as a room nobody airs. Only one of them ends the problem

Off-gassing ends when the compounds have left the building, so the single variable you control is the rate at which the air in the room is replaced. A fragrance introduced into that room changes nothing about the calendar and adds a second thing for the customer to detect, because two smells in one volume of air combine rather than cancel. That is not a preference, it is what happens. It also means the argument between the two is not really an argument: one of them is capable of solving the stated problem and the other is not, so the order writes itself. Spend on the building while the building is the problem, which in a new showroom is usually the first two months.
Tip: If the question is how to make a smell go away, the answer is never in a bottle.

The building that cannot clear an adhesive smell cannot clear yours either
This is the reason most people have not thought of, and it is the one that changes minds. A fragrance reads as fresh because the room is continually losing some of it and being given more, which is what a gentle, moving background smells like. In a building with poor air change the fragrance accumulates instead, and an accumulated fragrance stops reading as a well-kept room and starts reading as a room nobody opens. The complaint that arrives is almost always about the fragrance and almost never about the building, but the fix is in gate one every time. Sorting ventilation before you buy is not just good manners towards the off-gassing problem; it is what makes your eventual choice work at all.
Tip: If a room smells thick by mid-afternoon, that is an air-change symptom.

Somebody on the team will be keen on the fragrance, a supplier will be persuasive, an opening date will loom, and the sequence will be relitigated in a meeting where nobody has the facts to hand. This question usually arrives already framed as a compromise. Could we do a bit of both, they ask - get the fragrance in for the opening and sort the ventilation afterwards. I understand the pressure completely, because the opening date is real and the air handling is somebody else's department. But the two things are not alternatives competing for the same budget line. One of them is capable of solving the problem being described and the other is not, so there is no version of doing both where the fragrance contributes anything.
What I offer instead of a lecture is a gate, because a gate settles arguments and an opinion does not. Four questions: can the room replace its air, does extraction reach the back store and any demo kitchen, has the fit-out finished curing, and is the building genuinely clean. Write them on one sheet with a name and a date against each. If one fails, that is where the next money goes, and it is nearly always cheaper than a machine - a fan, a propped service door, an hour of an engineer's time, a skip. And the reason I care about gate one more than the rest is selfish as well as honest: a building that cannot clear an adhesive smell cannot clear mine either, so a fragrance bought into it will go thick and stale, and the owner will conclude the fragrance was wrong when the fault was in the air.

A great many showrooms have been recirculating the same air since handover without anyone realising, which is the worst configuration for a curing building. Ask whoever maintains it to show you the fresh-air setting rather than assuming one exists. That question is an engineer's, not a perfumer's.
What if the ventilation is poor and cannot easily be improved?
Then be honest about what a fragrance can be in that room, which is less than you hoped. A building with poor air change accumulates whatever it is given, so a fragrance in it stops reading as fresh and starts reading as thick within a few weeks. The useful spend is on whatever air movement you can achieve - fans, a propped service door outside trading hours, an extract path for the back store - before anything from a catalogue.
Does passing the gate mean I should buy a machine?
No, and I would rather say so. Plenty of showrooms that pass all four gates smell perfectly good with nothing at all, and if a cold walk-in gives you a clean, material-led room, you have already got what a machine would be trying to produce. Buy one when you want the control - a consistent level on trading hours, a key-lock, an entrance and a consultation room on the same air - rather than because the gate has been passed.
Will fixing all this and adding fragrance bring in more customers?
No one can promise that, and I will not.
