Why food smell survives in a car when it would not survive in a room

It is not, in two specific respects that together explain why a smell that would clear from a kitchen in an hour persists in a car for a week. The first is material. A car cabin has an unusually high ratio of absorbent soft surface to volume: seat fabric, foam, carpet, underlay, headlining and door card trim all take up volatile organic compounds released by food and then release them again slowly over subsequent days as temperature and humidity change. This is why a car can smell strongly of something eaten three days earlier with no visible trace remaining - the trace is in the material rather than on it. Hard surfaces do not behave this way, which is why a car with leather or leatherette upholstery generally holds food odour far less than one with fabric seats, and why the carpet is usually the most persistent reservoir in any car. The second is air exchange. In a kitchen, an extractor or an open window replaces the room's air with outside air, and the smell leaves with it. A car parked with the windows up exchanges almost nothing, and a car being driven with the air conditioning set to recirculate - which is the default in Indian traffic, for good reasons involving dust and exhaust - is deliberately not exchanging air either. The system is moving the same cabin air round and round through the vents, past the absorbent surfaces, back into the cabin.
