It is the one recommendation I make against my own product range, and I make it confidently. Guests judge food with their noses before their mouths, and the aroma of coffee, bread and cooking is what tells them the kitchen is real and the food is close - dilute that with an ambient blend and you weaken the strongest signal the room has. There is also a plain preference problem: most people find perfume near food unpleasant, and a soft floral drifting across a plate reads as a hotel corridor rather than a cafe.
